Saffron
The morning spreads gold through its mouth and our gold is red. Three pistils per flower and a little treasure hidden under the purple petals at a time of year when you don't expect blooms. We wake up early in the morning, before the flowers open, and patiently pick them, with the slow and careful gesture of early autumn mornings. This attention ensures that our saffron is rated in the first quality category, with high aromatic, colouring and bittering powers.
